Consuming whiskey can potentially influence histamine levels due to the alcohol content. Alcohol suppresses the metabolism and release of histamine while facilitating its production, which may lead to elevated histamine levels. It is also a known histamine liberator, amplifying the release of histamine into the bloodstream (Maintz, Novak, 2007). Whiskey often contains ingredients derived from grains, such as barley, corn, and rye that may have variable effects on histamine levels. These grains, when fermented for alcohol production, could, alongside yeast, contribute to greater production of histamine (Levin, 2017). Hence, the overall effect of whiskey consumption on histamine is complex and may vary among individuals depending on their sensitivity. However, the actual histamine content in whiskey is purportedly low, due to its distillation process which mitigates the presence of biogenic amines including histamine (Halász, Baráth, Simon-Sarkadi, Holzapfel, 1994). Thus, consuming whiskey does not directly raise the histamine level in the same manner as consuming high histamine level foods such as red wine and aged cheeses.
