Sauerkraut, the fermented cabbage known for its sour taste, can wield an impact on histamine levels, as fermentation is a process involving bacteria and yeasts that can produce histamine naturally. High amounts of histamine can trigger uncomfortable symptoms for those with histamine intolerance. Sauerkraut as a fermented food can possess high histamine content according to a study published in 2019 by "Food Microbiology". However, the histamine level can vary substantially, depending on factors such as fermentation method, length of fermentation, salt content, and storage conditions. Therefore, it's possible to find sauerkraut with lower histamine levels if it's freshly made and stored appropriately. Interestingly, some studies indicate that certain strains of lactic acid bacteria used in fermentation, such as Lactobacillus plantarum and Lactobacillus rhamnosus, might potentially degrade histamine and lower its levels (Ziegler, H. et. al., 2018).
