Aniseeds are well known for their culinary and medicinal purposes. Nonetheless, research regarding aniseeds' direct correlation with histamine levels is not fully established. Nonetheless, it's worth mentioning that aniseeds contain certain organic compounds that may have a role in histamine levels.
Aniseeds are rich in essential oils, notably anethole. Anethole has been acknowledged for its anti-inflammatory effect and potentially may inhibit histamine release contributing to alleviating allergy symptoms according to a study on the anti-allergic activity of anethole published in the journal "Pharmacological Research".
Moreover, due to the antioxidant and anti-inflammatory properties of aniseeds, this spice might contribute to a better inflammatory profile and therefore lower overall body inflammation, including histamine-mediated inflammation.
However, for individuals with histamine intolerance, the anti-inflammatory properties might not reduce histamine levels effectively. The reason is that histamine intolerance is not only a matter of inflammation but also related to DAO, the enzyme responsible for breaking down histamine in the body.
Under the assumption that a person is sensitive to high histamine foods, aniseeds could still play a favourable role in a histamine restricted diet when used as a culinary spice in moderate amounts due to the lack of high histamine foods and histamine liberators in its ingredient list.
As much as this holds true, remember that individual responses vary and while aniseed may help some people, others may still be sensitive to it because of a personal reaction and not a direct influence on histamine levels.
Despite the potential benefits and theoretical assumptions, more research is required in order to definitively classify aniseed's role in the histamine metabolism.
