That being said, chamomile as a whole has historically been classified as a potential histamine liberator, which means it may prompt the release of histamine within the body when consumed.
However, confusion arises as there's conflicting information available on chamomile and its relationship with histamine levels. Some sources, such as nutritional therapist Alison Vickery, classify it as both a histamine liberator and DAO inhibitor -- a substance that slows the action of the enzymes responsible for breaking down histamine in the body. Yet, a 2011 study published in the ‘Journal of Ethnopharmacology’ argued that chamomile tea, particularly the German variety, might have antihistamine effects alongside its noted anti-inflammatory and spasmolytic benefits.
In summary, current evidence on chamomile tea's exact impact on histamine levels is conflicted and relatively minimal; most of the studies to date have been conducted in animals or in test tubes, not in humans. Therefore, the effect of chamomile tea on histamine levels may vary from individual to individual.
