Rigatoni pasta, being a common type of pasta, primarily comprises wheat flour and water. As such, the primary components are carbohydrates and proteins, neither of which are known to significantly affect histamine levels or activity in the body. However, the impact of eating Rigatoni pasta on histamine levels can greatly differ based on the ingredients incorporated in the sauce or accompaniments.
The seemingly innocuous tomatoes, present in many pasta sauces, can potentially play a role. Tomatoes, notable in sauces, soups, or as pizza toppings, contain a substantial amount of histamine, which may boost histamine levels in persons who are particularly sensitive (1). This implies that a tomato-based Rigatoni could potentially increase histamine levels. However, to my knowledge, there appears to be no direct research relating specifically to Rigatoni pasta and histamine levels.
In some cases, Rigatoni can be served with cheeses or meats, like in "Rigatoni Alla Genovese." This dish typically contains beef and onions––foods that do not amplify histamine––but also hard cheese, which could increase histamine levels (2).
