Eggplant has a lot of histamine. Baba Ganoush, a popular Middle Eastern dish, primarily consists of roasted eggplant, tahini, olive oil, lemon juice, garlic, and seasonings. Tahini, made from sesame seeds, is much the same in terms of histamine. As with sesame seeds, research is inadequate to classify it into any of the listed histamine categories. Olive oil, another ingredient in Baba Ganoush, shows potential in lowering histamine levels. It’s a source of healthy fats that may reduce inflammation and its antioxidant properties could theoretically decrease histamine levels (Reference: Giugliano, D., Ceriello, A., & Esposito, K. (2006). However, concrete research and evidence regarding the effect of dietary oils on histamine levels are lacking.
