Golden beets, scientifically named Beta vulgaris, are part of the root vegetables family. Just like other vegetables in their family, golden beets are not known to possess histamine nor are they classified as histamine liberators. In fact, they are more likely to have a net beneficial effect on histamine levels due to their naturally high folate content, which is instrumental in the metabolism and breakdown of histamine. This is backed up by various sources that include the USDA Food Database and a text from The International Society of DAO Deficiency stating that beets are considered a naturally low-histamine food (USDA, 2019; International Society for DAO Deficiency, 2020). However, improper storage or lengthy storage can lead to an increase in histamine amounts in many foods, including root vegetables.
