Bluefin Tuna predominantly contains proteins, fatty acids, vitamins, and minerals. Interestingly, it also contains modest amounts of histamine due to its protein structure and biological makeup. Fresh Bluefin Tuna, if preserved adequately, may have insignificant histamine levels. However, the histamine levels may surge when the fish is not handled properly post-harvest, leading to bacterial spoilage which can increase histamine production (Williams, T.J., 1977). Eating Bluefin Tuna in larger quantities or regular consumption may increase histamine levels due to its histamine content and it being a histamine liberator, especially considering it is a fish product that falls under the category of carrying higher histamine loads. High levels of histamine in fish can often be attributed to improper storage and temperature abuse (FDA, 2021). It is important to note that there are food items such as Green and Black tea, which can potentially lower histamine levels.
