Saffron, a commonly used spice, is primarily derived from the flower of Crocus sativus. As per available research, it doesn't predominantly feature on the lists of foods that are known to have high histamine content, act as histamine liberators, or delay histamine breakdown. However, the limited number of studies on the specific impact of saffron on histamine levels indicate mixed results. A study published in the Iran J Allergy Asthma Immunol, showed that saffron could potentially have an anti-histaminic effect, indicating it may help decrease histamine levels. This study was performed on rat basophils and is yet to be explored further with human trials (PubMed Central, 2008). Conversely, some anecdotal evidence suggests that saffron, similar to other spices, could maybe trigger histamine release due to its potential allergenic properties. However, no concrete scientific evidence was found to substantiate this claim (Anecdotal evidence and forums). This ambiguity reflects the complexity of food responses in individuals suffering from histamine intolerance and underpins the need for further research around the subject. Hence, it is always advisable to pay attention to the individual tolerance level and the overall diet as individual reactions might vary significantly.
