Spaghetti Carbonara is a well-known dish of Italian cuisine that consists of four main ingredients: pasta, eggs, cheese, and pork. Starting with pasta, it doesn't contain histamine nor does it encourage its release in the body, thus it doesn't considerably impact histamine levels. However, the situation gets a bit complicated when we consider the other ingredients. Regarding cheese, it's typically made from cow's milk, which doesn't contain histamine. The issue, however, is that some types of cheese, particularly aged ones, can have high histamine content due to microbial fermentation during the aging process. But since Carbonara is traditionally made with freshly grated Pecorino Romano or Parmigiano-Reggiano cheese, which are not fermented for long, the idea of them causing a significant rise in histamine levels seems unlikely. Pork is another constituent of the dish, which again doesn't contain any intrinsic histamine. Though if it's uncured pork and especially if it was improperly stored, it could have high histamine. Eggs, the last major part of this recipe, don't contain histamine nor do they release it in the body, making them neutral in this case. In conclusion, while spaghetti carbonara doesn't contain intrinsically histamine-rich ingredients, some ingredients, depending on their specific quality or processing method, could contribute to an increase in histamine levels. For most people, the histamine impact from consuming spaghetti carbonara would likely be minimal. For those with histamine intolerance or sensitivity, possible replacements like fresh, unaged cheese, and freshly butchered or properly stored uncured pork could be considered to mitigate the histamine effect.
