Thai chilies, like other forms of capsicum, contain a compound known as capsaicin. Studies such as those conducted by Tewtrakul S and Subhadhirasakul S (2007) show that capsaicin can provoke the release of histamine from tissues, working as a histamine liberator. This would mean the ingestion of Thai chilies can potentially increase the histamine level in the body. Whilst Thai chilies do contain vitamin C, which is recognized for its histamine-lowering capabilities (Hemilä, H., 2014), the quantity in chilies may not be sufficient to counteract the histamine-releasing effects of capsaicin. However, certain studies (Morsi, N.M., 2000) suggest that capsaicin may also have anti-inflammatory and anti-oxidative effects, though it's unclear how these properties might impact histamine levels. This information suggests Thai chilies may play multiple roles in regulating histamine levels depending on the context, though more research is required to better understand these processes.
