Wild rice, which is actually a type of grass, is a nutritious food commonly found in North American and Asian cuisines. Although it's not currently identified as a high-histamine food in classic nutrition resources, it's important to understand that histamine levels in food can vary depending on several factors, including the freshness of the food, how it's stored, and how it's cooked. Wild rice is rich in fiber and nutrients such as vitamin B6, niacin, phosphorus, and magnesium. While these nutrients do not explicitly increase histamine, they may indirectly affect histamine levels in the body. Magnesium, for instance, is involved in the enzymatic degradation of histamine. It mediates diamine oxidase - the primary enzyme responsible for the degradation of ingested histamine (1). By this mechanism, wild rice could indirectly foster the breakdown of histamine and possibly contribute to lowered histamine levels in some individuals. Yet, complex dietary interactions can exist, and more research is needed to fully understand the implications of these nutrients on histamine metabolism.
